Sweet and Sour Chicken


"Chinese food" the name is enough to make us greedy. For a lovely Chinese platter I can go far away. Few old Chinese restaurants of Kolkata are always very close to my heart. We both always love to visit those places to have some nice food. He always asked me to make CHICKEN SWEET AND SOUR but I was bit scared because if the taste is not perfect then the full dish will become a complete waste. But can’t resist myself to try that at home. But it turned out awesome. 



Saturday always a special day in my home, he always wants to have something different in Saturday night, so this one for him. The recipe is very easy and this one easily makes your weekend perfect. Chinese dish is always tasty with Ajinomoto but it’s totally optional because it’s not good for health and I didn't use in my dish. But most of the restaurants uses this for the smell. 



Preparation time: 10 mints.
Cooking time: 30 mints.

Ingredients:

For Chicken:
1.Boneless chicken: 500 gm (cut into small cube pieces).
2,One egg.
3.One table spoon corn flour.
4.One table spoon soya sauce.
5.One tea spoon chili sauce.
6.One tea spoon vinegar.
7.Pinch of black pepper powder.
8.Pinch of salt.

For gravy:

1.Half green and red pepper (cut into small cube size pieces).
2.One medium onion (cut into small cube size pieces).
3.One small half carrot (cut into small pieces).
4.Chopped French onions: 2 to 3.
5.One tea spoon grated ginger and garlic.
6.One table spoon corn flour.
7.One table spoon soya sauce.
8.One tea spoon chili sauce.
9.One tea spoon honey.
10.One tea spoon vinegar.
11.One tea spoon tomato sauce.
12.Salt and sugar as per taste.
13.Pinch of black pepper powder, 2 to 3 split green chilies.
14.Sunflower oil for cooking.




Process:

Wash and clean the chicken pieces now marinate them with all mentioned ingredients.

Now slowly fry the chicken pieces few at a time till both the side turn brown. Soak the extra oil in a paper towel.


Now add some oil in a vessel and fry the peppers, onions, carrots, French onions for few mints with some salt.  Remove from the heat and keep it aside.


Now in a bowl add all the sauces, vinegar, honey and corn flour and make a nice thick mixture.

Now add little oil in a vessel and slowly add the sauce mixture in low flame and after 2 mints add one cup of warm water. Stir continuously so that no lump forms.

The moment the sauce start to boil add the crushed ginger and garlic. Stir slowly.

Now add the fried veggies and onions and cook for 2 mints.



Now add the fried chicken pieces with some salt and black pepper powder. Cook in low flame for 5 mints.



 The yummy SWEET AND SOUR CHICKEN is ready serve hot with CHINESE FRIED RICE.

Sesame Chicken


Sesame seeds are one of the oldest seeds used by human being. And among all the other seeds Sesame has the more oil consistency. From the very beginning people used this sesame seeds for coking. And especially in Chinese cooking sesame seeds are one of the very important parts. 
Most of the authentic Chinese preparations are made from sesame oil. From long time I purchased few sesame seeds but never prepared anything with them. How to use the sesame seeds in cooking while searching in Google i found all the information. Googled some recipes and prepared a nice dish Sesame Chicken one of a very famous Chinese preparation. 




This one is perfect with Noodles or Rice both. Last night we both were very hungry so didn’t have enough time to prepare some noodles so we had with Paratha only. Which was also not so bad combination.



Preparation time: 15 mints.
Cooking time: 30 mints.

Ingredients:
For marination:
1.Boneless chicken : 600 gm. (cut into small cube size).
2.One tea spoon ginger and garlic paste.
3.One table spoon dark soya sauce.
4.One table spoon sesame oil. (if you don’t have sesame oil just add some sesame seeds in normal sunflower oil till a nice smell come out).
5.Some salt.
6.One table spoon corn flour.
7.One table spoon all-purpose flour.
8.Half tea spoon red chili powder.

For sauce:
1.One table spoon green chili paste.
2.One tea spoon grated ginger.
3.Four to five clove grated garlic.
4.One table spoon dark soya sauce.
5.One table spoon vinegar.
6.One table spoon tomato sauce.
7.One table spoon corn flour.
9.Half tea spoon red chili powder.
10.Salt and sugar as per taste.
11.Some chopped green onions.
12.One tea spoon honey.
13.Some sesame seeds for garnishing.
14.Sesame oil or normal sunflower oil for frying and cooking.

Process:
Marinate the chicken pieces with all the mentioned ingredients for 30 mints.



Now add enough oil in a vessel and fry the chicken pieces slowly. Soak the extra oil in a paper towel.



Now take one wide pan and add some oil , now add some sesame seeds and grated garlic &  ginger pieces and fry till the smell come out.

Now make one paste with chili paste, corn flour, soya sauce, tomato sauce, vinegar and some water. And add the mixture into the pan and cook for some time.  

Now add the fried chicken pieces and stir for some time.

Now add the chopped green onions and honey, combine well and switch of the heat.




Now garnish the chicken with some toasted sesame seeds (just dry roast the sesame seeds) and green onions.



Serve hot and enjoy the taste.

Chili Soya

Almost 2 months before I purchased one Soya chunk packet, but totally forgot about that. For my lunch nothing was there today so I planned to purchase something form outside, While searching for one poppy seeds packet I found that Soya Chunk packet form my kitchen cabinet. And then only I thought to prepare something with that. Though my husband doesn’t like Soya Chunk that much, I just prepared something for myself only. Long time back I had this in one of my friend place. So just tried to recall my memory, anyhow able to finish the tasty preparation.

Soya Chunks are really healthy for all of us. My Maa used to give Soyabean in my lunchbox during my School days.

The preparation is very easy so if you have short notice guest, you can prepare this one. And believe me kids will also like that. For a change you can prepare this one for your kiddies also.

 


Preparation time: 10 mints.
Cooking Time: 20 mints.
Serve for 4 people.

Ingredients:
1.Soya Chunks: 1 cup.
 



2.One medium onion cut into small cube size.
3.One small Tomato cut into small cube size.
4.Colorful pepper of your choice cut into small cube size: Half cup.
5.One table spoon ginger garlic paste.
6.Two to Three chopped green chilie.

7.Soya Sauce, Tomato Sauce, Chili Sauce (One Table spoon of each item).



8.Red Chili Powder: Half Tea spoon, Black pepper powder: Half tea spoon.
9.Salt & Sugar as per taste.
10.Sunflower oil.

Process:

Boiled the soya chunks with a pinch of salt. Now shallow fry them in little oil and keep them aside.

 


Now put oil in a vessel and add the onions, tomatoes, peppers and green chilies. Fry for some time now add the ginger garlic paste. And cook till the raw smell of ginger & garlic goes off.
 


Now add red chili and black pepper powder with little salt and sugar.
Now add all sauces and mix well with everything. Finally add the fried Soya Chunks and cook for another few mints.
 


 
I prefer th have this one with Peas Polao but you can have with Roti also.

Chicken Manchurian

“Rain Rain go away come again another day” that’s the only line I want to sing today. Last 48 hours the weather is so bad and too chilly. To make our self-happy and busy tried one of our favorite Chinese preparations Chicken Manchurian. It’s spicy but we loved it so much.

We have a favorite Chinese Restaurant here, basically the cook is from Kolkata only. So the taste of the food is authentic Indian style Chinese. And most of the time we ordered this one.



Preparation time: 15 mints.

Cooking time: 40 mints.

Serve for 4 people.

Ingredients:

1.Boneless Chicken 800 gm (you can use with bone chicken also).
2.Three Eggs.
3.Two medium size onion cut into cube size.
4.One green bell pepper cut into cube size.
5.Four to Five split green chilies
6.Garlic paste one tea spoon.
6.One table spoon all-purpose flower.
7.Two table spoon corn flower.
8.Half tea spoon baking powder.
9.One tea spoon black pepper powder.

10.A pinch of red chili flakes.
11.Soya sauce: 2 table spoon, Tomato Sauce: 1 table spoon. Vinegar: 1 tea spoon, Chili Sauce: 1 Tea spoon.
11.A pinch of ajinomoto.
12.Salt & Sugar as per taste.
13.Sunflower oil.


Process

Marinate the chicken pieces with some salt and pepper powder.

Now make a smooth batter with eggs, black pepper powder, salt, red chili flakes, all-purpose flower, baking powder and half tea spoon of corn flower.


Now deep the chicken pieces into the batter and deep fry them. Soak the extra oil in a paper towel.

 
 

Rest of the corn flower, little soya sauce, tomato sauce mix with some water and make a smooth paste and keep it aside.

Now add the some oil in a pan and the onion pieces and split green chilies, fry for 2 to 3 mints.

Now add the garlic paste and fry for some time more.

Now slowly add all the sauces with some salt and sugar. Cook for some time, now add the fried chicken pieces and green bell pepper. Cook for few mints in high flame. Now reduce the flame and add ajinomoto.



Finally add the corn flower mixture and mix well with everything , Chicken Manchurian is ready serve hot with fried rice.

Egg Less Chili Chicken

Chinese we all love like crazy .So friend’s try my egg less Chili Chicken.


 

Prep time 1 hr 30 mint.

Serve for 2 person.

Ingredients:

1.Chicken 700 gm.
2.One large onion chopped (cube size)
3.Half tomato chpeed.
4.One green pepper chopped (cube size)
5.five to six clove of garlic (chopped nicely).
6.One tea spoon vinegar.
7.One tea spoon soya sauce .
8.Two tea spoon tomato sauce.
9.One tea spoon chili sauce.
10.One table spoon Cornflower.
11.One tea spoon red chili powder.
12.Five to Six green chilis cut in straight wise.
13 Salt and sugar(optional)
14.Sunflower oil or sesame oil.
15.A pinch of ajinomoto.


Process:

Marinate the chicken with chopped garlic ,red chili powder, vinegar and all the sauces, some salt for 1 hr.

Now add some oil in a karai and add the chopped onion's, (few chopped onion keep aside) green chilis and the tomato fry for some time till the colour change .

Now add the marinated chicken cook for 5 mint.

Then cover with lid and cook for another 10 mint.

In a bowl add cornflower , water and all the sauces and make a nice mixture.

Now add the cornflower mixture the chopped pepper and the left onion’s. U can sprinkle some water also Cook for another 5 mint.

Your Chili chicken is ready, serve hot with Noodles or Fried Rice.

Chinese Fried Rice

 
This is the first time I prepared Chinese Fried Rice. And the taste is beyond my imagination. Very easy to cook, Just your rice not be over cooked so take care of that.


 
 


Prep time : 15 mints.

Cooking time 30 mints.

Serve for 2 people.

Ingredients:

1.Two small cup unscented rice.
2.Finely sliced cabbage (One small cup).
3.Few chopped beans.(Half cup)
4.Red & green Pepper chopped. (Half cup)
5.One small size chopped onion.
6.Two clove minced garlic.
7.Two Table spoon soya sauce.
8.Half table spoon vinegar.
9.One tea spoon of black pepper powder.
10.Salt & Sugar as per taste.
11.Sunflower oil Or Sesame oil.

Process:

Soak the rice in water for 15 mints and drain. Now boil rice with some salt and oil cook uncovered till it done and not over cooked. (Each grain of rice should be separate). And keep it aside.

Now put oil in a wide pan or oak and start frying all the vegetable in high flame so all the vegetables are crispy for 3 to 4 mints.




Now add the minced garlic and cook for another 2 mints and add the black pepper powder.

Now add the soya sauce and vinegar mix well with all the vegetable and finally add the cooked rice with some salt and sugar mix well with everything. Cook for another 2 to 3 mints.




Serve hot with any Chinese dish.

Spicy Dry Chili Chicken


Summer is end for us, feeling so sad. Again the horrible winter is going to knock our doors. So we want to celebrate the last summer weekend (Most probably) with some Chinese Food. From morning it’s a busy day for me because it’s Sunday, have to do the laundry, Vacuum and lots more. So made some quick and easy Dry Chili Chicken & Chinese Fried Rice. We enjoyed with a glass of Cold drinks. Thanks to my hubby for the idea. Enjoy My Dry Chili Chicken with your partner.



Prep time: 20 mint.

Cooking time: 30 mints.

Serve for 2 people.

Ingredients:

For marinating:

1.Chicken 600 gm (you can use bone or boneless both).
2.Two table spoon of All-purpose flour.
3.One table spoon of cornflower
4.One tea spoon of ginger & garlic paste.
5.One tea spoon of red chili powder.
6.One tea spoon of black pepper powder.
7.One table spoon soya sauce.
8.Salt as per taste.

For cooking:

1.One large size onion (chopped).
2.Green & Red bell (chopped).
3.Few green chilies (cut in straight wise).
4.Minced garlic one tea spoon.
5.Two table spoon soya sauce.
6.One table spoon of vinegar.
7.Two table spoon of tomato puree.
8.Apinch of Ajinomoto (optional).
9.Salt & Sugar as per taste.
10.Sunflower oil.

Process: Mix all marinated ingredients together with some water and make a smooth mixture. And
put all the chicken pieces into the mixture.


Put oil in a Karahi and deep fry all the chicken pieces (few at a time) and soak extra oil in a paper towel. And keep it aside.



Now put oil in a vessel and add the chopped onions, Chopped peppers, Green chilies fry them in high flame after few mints ,add the minced garlic and fry for some more time.

Now add the Soya sauce & tomato puree and mix well. Add some salt, sugar and a pinch of Ajinomoto.

Finally add the fried chicken pieces and mix well. Cook for few mints.



Your spicy dry chili chicken is ready serve hot with Fried Rice.
