Homemade Butter Naan.


I was so exited last night after finished my first successful batch of BUTTER NAN’S. Wow they were so good and soft also. Most of the time we preferred to have NAAN in restaurants, but never tried at home before. I always thought it will never be like restaurants. But believe me this one is too good. And the recipe is also not that tough. I just added few chopped coriander leaves which I saw long time back in a cookery show.



After having our dinner my husband asked me when you are going to make this again and I think that’s the best complement for your food. I am not a professional I love food and love to cook for others that’s why when someone else says few good words about my cooking I just feel top of the world.



Preparation time: 8 to 10 mints.
Cooking time: 5 to 8 mints.

Ingredients:
1.All-purpose flour: one cup.
2.Two table spoon curd.
3.Half cup milk.
4.A pinch of salt.
5.A pinch of sugar.
6.Half tea spoon of baking powder.
7.A pinch of baking soda.
8.Chopped coriander leaves: A handful.
9.One table spoon butter.

Process:

Take one big bowl and put the all-purpose flour on that.

Now add the baking powder, baking soda, salt and sugar. Mix well.

Now add the curd and mix well.

Now add the milk (slowly) and the chopped coriander leaves and make a nice dough (if you need more milk to make the dough then add but don’t add water.



Now leave the dough for 30 mints in an air tight box.

Pre heat your oven in maximum temperature.

After 30 mints make some small round balls, now deep the balls into some flour and with a help of a roller make some oval shape NAAN'S.



Now take one oven proof pan and cover it with a aluminum foil and place the NAAN’S in single layer and grill it for 6 to 8 mints. But every 2 mints just flip the NAAN’s or cook till both the side turn into little brown color. 



After take it out from the oven just brush some butter on top your NAAN’S. Serve hot with any Curry I prepared some Chicken Chap with this.

Chocolate Brownie


A very chocolaty and yummy delicious dish which I baked yesterday and enjoyed every bites of the CHOCOLATE BROWNIE. A very easy delicious dish made with lots of coco powder. Brownie is a very famous dessert which you can serve with Ice cream or Hot chocolate. So many days I was planning to make BROWNIE and also looking for an easy brownie recipe too. Few days back in a cookery show I saw this easy recipe and can’t stop myself to make this. 



The steps are really easy which is more important is that you have to careful about the measurement. And the proper temperature will make your BROWNIE perfect.



Preparation time: 20 mints.
Baking time: 35 to 40 mints.

Ingredients:
1.All-purpose flour: 100 gm.
2.Eggs: 3.
3.Butter : 180 ml or ¾ cup. 
4.Granulated sugar: 350 gm sugar.
5.Coco Powder: 75 gm.
6.One table spoon vanilla essence.
7.One tea spoon baking powder.
8.Some chopped walnuts.



Process:
Pre heat the oven in 175 degree C.

Put the butter in microwave for 20 seconds. 

Now in a large bowl add the melted butter and the sugar, mix well nicely.

Now whisked the eggs with a fork and slowly add them into the bowl and mix well.

Now add the vanilla essence and the baking powder, mix well.

Now add the all-purpose flour and the coco powder and mix well with everything.

Finally add the chopped walnuts and just mix well.

Take a loaf pan and grease this with little butter and sprinkle some flour into that.

Now pour the batter into the pan and bake it for 35 to 40 mints or till the inserting of a tooth pick into the cake doesn't come out with unbaked batter.



Let it cool, and then cut into small square pieces. Enjoy your brownies.

Pound Cake with Yogurt


Few days back one of my friend asked me some cake recipe where instead of butter we can use vegetable oil. And I asked my Ma about that because in my child hood days she used to prepare cakes for us and once she used some vegetable oil in cake because that time the butter was not at home. So I confirmed about one thing that we can make cake without butter also.

And I prepared some simple pound cake without butter and extra I added some yogurt this idea I got from a cookery show. And the result is fabulous, a very easy way to make your family 
happy. 



Preparation time: 20 mints.
Baking time: 50 to 55 mints.

Ingredients:
1.All purpose flour: 1 ½ cup.
2.Eggs: 3.
3.Granulated sugar : 1 ½ cup.
4.Vegetable oil:  170 ml or ¾ cup.
5.Vanila yogurt : 170 ml or ¾ cup.
6.One table spoon baking powder.
7.One table spoon vanilla essence.
8.One small lemon's zest.



Process:

Pre heat your oven in 175 degree c.

Now take one big bowl and add the yogurt into this beat well, now add the sugar and beat till the sugar mix nicely.

Now add the eggs into the bowl and mix nicely.



Next add the vegetable oil and make the mixture smooth.

Now add the baking powder, vanilla essence and the lemon's zest and mix with everything nicely.

Finally add the all-purpose flour and mix well doesn't beat so much.

Take a loaf pan and grease this with little butter and sprinkle some flour into that. 



Now pour the batter into the pan and bake it for 40 to 45 mints or till the inserting of a tooth pick into the cake doesn't come out with unbaked batter.



Your yummy and very easy Pound Cake is ready enjoy with a cup of Coffee.

Dry Fruit Christmas Cake

Merry Christmas to all of you, hope you all had a blast on Christmas Eve. I was just busy backing cake and preparing dinner. Santa can come anytime so have to make everything ready.
 


I made one dry fruit Christmas cake. I hope Santa likes the cake but my home Santa (my husband) liked it a lot. For me Christmas has lots of memories, especially almost all 25th December most of our family members  used to arranged some get together or picnic. And my Maa used to prepare the Christmas Cake in an old cake oven.

Preparation time:15 mints.
Cooking Time: 40 to 45 mints.


Ingredients:

1.All-purpose flour: 2 cups.
2.Two Eggs.
3.One Cup Salted Butter.
4.One cup sugar.
5.Two tea spoon vanilla essence.
6.Half cup cream milk.
7.One tea spoon dark brown sugar.
8.Two tea spoon baking powder.
9.One tea spoon baking soda.
10.A pinch of mixed spices (clove. Cinnamon and Nutmeg).
11.Half tea spoon of lemon extract.
12.Half cup dry fruit (cashew nuts, raisin, walnut, dry cherries, dry cranberries).


Process:

In a bowl add the all-purpose flour, baking soda and baking powder and mix well.

Now in another bowl add the butter and sugar and mix well till the butter and sugar melt. Now add the brown sugar and mix well.



Now add eggs one at a time beat nicely. Now slowly add the flour mixture with the milk and vanilla essence. Mix well.

Now add all dry fruits and the spices powder. Mix well, finally add the lemon extract.

Pre heat the oven in 175 C. Now grease and flour one loaf pan and baked it for 40 to 45 mints. Check between with a tooth pick.

Tuti Fruti Cake


“Santa Clause is coming to town” so we have to get ready with cake and Milk. I know he likes cookies too which I made few days before only. Let’s bake some nice Fruit Cake. The idea of making this fruit cake got from my Friend Tanushri Dan. She is a fabulous cook.




This cake reminds me my school days. This one is very famous school tiffin cake. I think we all have some sweet memories with this fruit cake. Especially for picnics and all kind of trips this cake is must for all of us. I made two cakes and within just few hours my husband finished almost 80%. It’s not that tough to make all you need the color full dry fruit and other ingredients are easily available at home.

 

With a cup of coffee and a slice of fruit cake my before Christmas day is going to rock. Let’s cherish your childhood memories with my Tuti Fruti Cake.

Preparation time:15 mints.
Baking time: 40 to 45 mints.


Ingredients:
1.One cup all-purpose flour.
2.One egg.
3.One cup granulated sugar.
4.One tea spoon baking powder.
5.Half tea spoon baking soda.
6.One table spoon pineapple essence.
7.Half cup Dry Tutti Fruti.
8.Half cup butter.
9. Half cup Milk.


Process:

Pre heat the oven into 175 C.

Mix all-purpose flour with baking soda and baking powder.

In a bowl mix the butter and sugar till the sugar mix completely with butter. Now add the egg and mix nicely.


In that bowl add the all-purpose flour slowly and mix nicely with the egg mixture. Now add the pineapple essence and the milk and beat for 2 mints.

Before adding the tutti frutti, toss them into little all- purpose flower and then slowly add them into the mixture. Now no need to beat more just once mixes them with the batter.



Take a loaf pan and grease them with little butter and sprinkle some flour into that. Now pour the batter into the pan and bake it for 40 to 45 mints or till the inserting of a tooth pick into the cake doesn’t come out with unbaked batter.



Make it cool down now slice it and enjoy with a cup of Tea or Coffee.

Naan Khatai Or An Egg Less Cookie

Today is really a happy day for me because this one is my 100th post in my blog. When I started blogging I thought it’s never going to cross more than 50. It’s really a difficult task for me to maintain a blog with a 14 month old baby but anyhow I am able to manage my duty and passion together.Today I am posting my century recipe. I am really glad and overwhelmed with all the support from my Husband and all my lovely friends, who encouraged me from the beginning. And whenever my friends tell that they cooked my recipe and it turned out really good the feelings is something different. I just want to say my family and friends that just be with me, many more to come. 


Today I made Naankhatai a Cookie without eggs. This Naan Khatai is very famous biscotti in Surat, Gujrat. Very easy to make with only few Ingredients which is easily available at home. And perfect for Tea or Cofee.


This is the first time I prepared something like that, so while making I was really nervous. But the end result is really appreciated. So my Christmas starts with my first baking Biscotti. The taste is really good you can try at home.


Preparation time: 15 mints.
Cooking time: 40 mints.


Ingredients:

1.One cup of all- purpose flower.
2.Half cup of sugar.
3.ne table spoon of Suji or Semolina.
4.A pinch of freshly squished  cardamom , and a pinch of freshly squished Jaifal.
5.One table spoon almond powder.
6.Half tea spoon of Besan or Gram Flower.
7.Half Cup Salted Butter.
8.One to Two tea spoon of warm milk.
9.Few pistachios for garnishing.


Process:

Put all no 1 to 7 ingredients in a bowl as mentioned above and mix well.
Now add the butter and gram flower into it and make dough if needed add one or two tea spoon of warm milk.

 

Now pre heat the oven in 350 degree F. Make some small balls with the dough and place them into a non-greased over proof pan and garnished with pistachios.


 

Now bake it for 10 mints. Now low the heat in 225 degree F and bake for another 12 mints.

Now flip them and bake for another 10 to 12 mints, in between just check it should not be over baked.


Enjoy your Naan KHatai with Tea or Cofee.

Kucho Nimki or Salty Snacks or Namakpara

Whenever two people meet, anywhere, anyplace the first thing come in our mind is let’s having a cup of tea. And for every cup of tea we need perfect snacks also. Like we Bongs always say that Cha with Taa. That mean without a perfect Taa our Cha is Incomplete.

Friends used to come home very often, so every time I used to think what to give with Tea.  As usual my Maa has the solution. And she gave me her home made ‘Kucho Nimki’ recipe. From now onwards every time in my place there is Nimki with Tea. You can try this too.



Preparation time : 10 mints.

Cooking time : 15 mints.

Ingredients:

1.All-purpose flour: 200 gm.
2. Half tea spoon kalonji.
3.Salt & Sugar as per taste.
4.Three table spoon sunflower oil. (For Dough).
5.Half cup water.
6.Sunflower oil for frying.

Process:

Make dough with all the mentioned ingredients except no 6.

Now make big balls with the dough.




Roll the dough with all-purpose flour like a big roti.

 


Now cut them with a knife across the width, first horizontally then vertically.  



Cut like diamond shapes.


Now deep fry the Nimki’s , few at a time .



Soak the extra oil in a paper towel.



Enjoy with Tea or Coffee.

Chocolate Cake

My mom used to make cake in an old cake oven its very old one but all the cake comes out so yummy. Still we have that at home. I love cakes but can’t make like my mom, because mom’s cooking is just the best. Here is one of my mom’s cake recipe.


Chocolate cake

Ingredients:

1.All-purpose flour 250 gm.
2.Sugar 250 gm(grounded).
3.One cup of milk.
4.One cup of butter or sunflower oil.
5.Three Table spoon coco powder.
6.Two table spoon coco syrup.
7.Choco cheeps.
8.Two eggs.
9.Dry fruits.(cashew nuts,raisin,almond).



Process:

Put all ingredients(except the dry fruits) in a bowl and mix them all and make a smooth batter. No lump should be theirs. (for around 2 hr) At last add the choco cheeps.

Pre heat your oven in 350 degree F .

Now grease an oven proof bowl with butter and put all the mixture, add the dry fruits and bake it for 25 to 30 mint. (Check between with a wooden stick if it’s come out smoothly then your cake is ready.

Fried Chicken Momo



In Kolkata there is a place call Rabindra Sadan where the most popular street food is MOMO. It’s very cheap and tasty. During my college day’s I used to go there with my friend’s to have MOMO’S. Me and my hubby dear cherish our old memories in an evening with my homemade Chicken MOMO. Those old days are the best days of our life.




Prep time :40 mint.

Cooking time: 20 mints.

Serving for 2 people. (Approx. 8 piece)

Ingredients:

For Dough:

1.All-purpose flour 150 gm.
2.Apinch of salt and sugar.
3.One table spoon of sunflower oil.
4.Half cup of Luke warm water.

For stuffing:

1.Boneless shredded chicken 200 gm.
2.One medium size chopped onion.
3.Three to Four clove minced garlic.
4.Three to four chopped green chilies.
5.One table spoon soya sauce.
6.Half tea spoon of vinegar.
7.Half tea spoon of red chili powder.
8.Half tea spoon of black pepper powder.
9.Salt & Sugar as per taste.
10.Two table spoon sunflower oil.

Process:

Make a nice and tight dough with all the mentioned ingredients and keep it aside.

Marinate the shredded chicken with a pinch of salt some minced garlic and vinegar for half an hour.

Now add oil in a pan add the chopped onion & green chili’s fry for some time.

Now add the minced garlic and fry for another 2 mints.

Now add the marinated chicken with soya sauce,Vinegar ,Red chili powder & Black pepper powder with some salt and sugar.

And mix them all and cook till a nice color come out.

Your MOMO stuffing is ready.

Now make some small balls with dough.With every ball make some small round shape puri with little dry all- purpose flower.

Now put one spoon of MOMO stuff on middle of each puri and put the two sides together. Like a half circle.

Now add oil in a deep vessel and deep fry your MOMO’S.



Serve hot with Soup ….
